Transport your morning back to the heartwarming breakfasts at mom's house with these delectable Bean and Cheese Enfrijoladas. This is an uncomplicated yet delightful recipe that we, Chefs Jaime y Ramiro, love to share. Perfect for a cozy breakfast or a casual brunch, these tostadas bring the robust flavors of traditional Mexican cuisine right to your table. Now, let's get started and give your family a taste of this simple, homestyle classic.

Ingredients:

- 2 cups of cooked beans (pinto or black)

- 1 Chile Guajillo, seeded

- 1 small piece of garlic

- 1 slice of onion

- Cooking oil or lard, for frying

- Corn tortillas

- Crumbled Cotija cheese (or your cheese of preference like Queso Fresco or Panela)

- Cream (optional, for serving)

- Cilantro leaves (for garnish)

- Salt, to taste

Instructions:

1. Begin by heating a bit of oil or lard in a frying pan. Once it's hot, add the Chile Guajillo, garlic, and onion. Fry these ingredients quickly, making sure they don't burn, to infuse them with flavor.

2. Remove the fried chili, garlic, and onion from the heat and transfer them to a blender. Blend these ingredients to create a seasoned paste for the beans.

3. Heat some oil in a skillet and gently fry the corn tortillas on both sides until they are soft and pliable.

4. Spread the seasoned bean paste generously over the softened tortillas. Add your cheese of choice, be it Cotija, Queso Fresco, or Panela, on top of the bean layer.

5. Fold the loaded tortillas in half, like a quesadilla, making sure not to break them. You can opt for newly made tortillas that won't require passing through oil if they're soft enough.

6. Place the folded tortillas back onto the pan to slightly crisp up the cheese-filled tostadas.

7. To serve, arrange three of these tostadas on a plate. Top them with more crumbled cheese, and if you like, a dollop of cream for added richness. Garnish with fresh cilantro leaves.
