Instructions

1- Marinate the Fish:

  • Season the snook steaks with salt and lime juice.
  • Let marinate for 5-10 minutes.

2- Prepare the Pot:

  • Use a thick-bottomed pot.
  • Layer the bottom with sliced onion to prevent sticking.

3- Layer the Ingredients:

  • Add a layer of sliced red, yellow, and green bell peppers.
  • Top with sliced tomatoes and a sprinkle of salt.
  • Place half of the marinated fish steaks on this vegetable mixture.
  • Repeat the layering: onions, bell peppers, tomatoes, and salt.
  • Add the remaining fish steaks.
  • Top with more onions, peppers, and tomatoes.

4- Final Touches:

  • Distribute torn cilantro evenly over the layers.
  • Drizzle with palm oil and olive oil.
  • Sprinkle with chili flakes or place a chili pepper.
  • Pour coconut milk evenly over all ingredients.

5- Cook the Stew:

  • Place the pot on a medium heat setting and cover it with a lid.
  • Bring the mixture to a boil, which takes about 10 minutes.
