Caribbean Chickpeas Stew

Ingredients
š„« 8 cups soaked and cooked chickpeas

2 small-medium yellow onions

2 vine-ripened tomatoes
š¶ļø 1 scotch bonnet pepper (optional, not used in the demonstration)
šæ 1/4 cup fresh thyme leaves or 1 tsp dried thyme (optional)
š§ 5 scallions, chopped
š« 1 thumb ginger, grated
š„„ 3-4 tbsp coconut oil
š§ 3 tbsp seasoning sea salt blend, Real Salt
š± 3/4 tsp turmeric
šæ 1 tsp coriander
š° 1/2 tsp allspice
š 4 portobello mushrooms for blending
š„„ 2 cups coconut milk for blending
šÆ 2 tbsp seamoss gel (optional)
š² 2 cups cooked chickpeas stew from the main pot, for blending
Instructions
1- Prepare the Chickpeas:
- Soak 8 cups of chickpeas overnight. Rinse and drain them well.
- Boil the soaked chickpeas for 30 minutes in a large cooking pot.
2- Add Vegetables and Spices:
- Chop 2 yellow onions and 2 vine-ripened tomatoes. Add them to the pot with chickpeas.
- Add 5 chopped scallions and 1 grated thumb of ginger to the pot.
- Stir in 3-4 tablespoons of coconut oil.
3- Season the Stew:
- Add 3 tablespoons of seasoning sea salt blend, 3/4 teaspoon of turmeric, 1 teaspoon of coriander, and 1/2 teaspoon of allspice.
- Stir well to combine all ingredients. Cover and let the seasonings cook briefly.
4- Blend for Creaminess:
- In a Blendtec blender, combine 4 portobello mushrooms, 2 cups of coconut milk, and approximately 2 cups of the cooked chickpeas stew. Optionally, include 2 tablespoons of seamoss gel for extra nutrients.
- Blend until smooth and creamy.
5- Combine and Simmer:
- Pour the blended mixture back into the main pot of chickpeas stew.
- Stir thoroughly to incorporate the creamy sauce.
- Let the stew simmer on low heat for a few minutes to meld flavors before serving.
