Talatouri is a classic Cypriot dip akin to Tzatziki but with a refreshing twist of mint. This deliciously thick and creamy sauce is perfect as an appetizer or side dish, especially when paired with grilled meats.
Ingredients
š„ 1 cucumber
š„ 500g Greek Yogurt Brooklea Greek 10% Fat
š§ 3 garlic cloves
š« 4 tablespoons Extra Virgin Olive Oil unknown brand, green label
š Juice from 1 lemon
šæ 2-3 tablespoons chopped mint leaves
š§ A pinch of salt
š¶ļø A bit of black pepper
Instructions
1- Prepare the Cucumber:
- Peel the cucumber using a standard metal peeler.
- Slice the peeled cucumber into thin rounds.
2- Process the Cucumber:
- Place the sliced cucumber into a small, white and clear plastic food processor and blitz for 5-10 seconds until finely chopped.
- Alternatively, grate the cucumber.
3- Salt and Rest:
- Sprinkle a pinch of salt over the blitzed cucumber and mix briefly.
- Let the salted cucumber rest in a clean kitchen towel for about 10 minutes to draw out excess water.
4- Squeeze Excess Liquid:
- Wrap the cucumber tightly within the towel.
- Over a metal sieve with a copper-colored handle, squeeze out as much liquid as possible, taking your time for optimal results.
5- Combine Ingredients:
- In a large stainless steel mixing bowl, combine 500g of Greek yogurt with the squeezed cucumber.
- Add 3 minced garlic cloves, 4 tablespoons of extra virgin olive oil, the juice from 1 lemon, and 2-3 tablespoons of chopped mint leaves.
6- Mix Thoroughly:
- Mix all the ingredients thoroughly until well combined.
- Season with a bit of black pepper and blend again to ensure even seasoning.
7- Chill for Flavor:
- Cover the mixing bowl with cling film.
- Refrigerate for at least one hour to allow the flavors to meld.
8- Serve:
- Before serving, garnish with a fresh mint sprig.
- Drizzle lightly with extra virgin olive oil.
