Ingredients
🧈 130g Butter
🍬 165g Granulated Sugar
🥚 2 Large Eggs
🌾 220g All-purpose Flour
🥄 1 teaspoon Baking Powder
🧂 Approximately 1/4 teaspoon Salt
🥛 40g Milk
🌻 25g Vegetable Oil
🍦 Approximately 1 teaspoon Vanilla Extract
🥛 Vispgrädde Heavy Cream: Approximately 1 deciliter
🍚 1 tablespoon Powdered Sugar
🍰 Vanilla Bean Powder: To taste
🍓 A generous amount of Strawberries, halved
🌸 Fresh Elderflower Blossoms
Instructions
1- Prepare the Cake Pan:
- Oil the bottom of a RÖSLE springform cake pan.
- Fold parchment paper into a triangle and cut to fit the pan. Place it at the bottom and oil the paper and sides of the pan. Set aside.
2- Make the Cake:
- In a Kenwood stand mixer with a paddle attachment, beat 130g butter and 165g sugar on high for 2 minutes until light and fluffy.
- Add the eggs one at a time, mixing for 2 minutes each. Scrape down the bowl frequently.
- Add half of the flour, 1 teaspoon baking powder, and 1/4 teaspoon salt. Mix gently by hand until just combined.
- Mix in 40g milk, 25g vegetable oil, and 1 teaspoon vanilla extract.
- Add the remaining flour and mix gently.
- Pour the batter into the prepared pan, smoothing the top.
- Bake in a Siemens oven at 185°C (365°F) for 20 to 25 minutes or until a toothpick comes out clean.
- Let it cool completely on a wire rack.
3- Prepare the Whipped Cream:
- In a mixing bowl, combine 1 deciliter Vispgrädde heavy cream, 1 tablespoon powdered sugar, and a sprinkle of vanilla bean powder if using.
- Whisk until the cream is stiff but not grainy.
4- Assemble the Cake:
- Transfer the cooled cake to a cake stand or serving plate.
- Spread the whipped cream over the cake, creating a slightly hollowed center.
- Decoratively arrange halved strawberries and scatter fresh elderflower blossoms on top.
