Ingredients
For the Patties:
🥩 500g Mixed Ground Meat
🧅 ½ Yellow Onion finely chopped
🥛 1.5 dl Milk
🍞 ½ dl Breadcrumbs
🥚 1 Egg
🍯 1 tbsp Sweet Mustard
🧂 1 tsp Salt
🌶️ ½ tsp Black Pepper freshly ground using Zassenhaus pepper mill
🌻 2 tbsp Neutral Oil for frying
🧈 1 tbsp Butter for frying
For the Caramelized Onions (Topping):
🧅 3 ½ Yellow Onions thinly sliced
🌻 2 tbsp Neutral Oil for frying
🧈 1 tbsp Butter for frying
🍶 Few drops Japanese Soy Sauce Kikkoman
🥫 Few drops Worcestershire Sauce Lea & Perrins
🧂 1 tsp Salt
🌶️ ½ tsp Black Pepper freshly ground using Zassenhaus pepper mill
Serving Suggestions:
🥒 100g Pickled Cucumber gherkins
🥔 4 Boiled Potatoes
🌿 1 bunch Fresh Parsley chopped
Instructions
1- Prepare Onions for Patties:
- In a Scanpan frying pan, heat neutral oil over medium heat.
- Add ½ of a finely chopped yellow onion and sauté until softened and lightly golden.
- Add butter, continue cooking until caramelized, then set aside.
2- Prepare Patty Mixture:
- In a ceramic vintage-style mixing bowl, mix milk and breadcrumbs; whisk using a wire whisk until the breadcrumbs have absorbed the milk.
- Add sweet mustard, egg, salt, and black pepper. Whisk until combined.
3- Combine with Ground Meat:
- Add sautéed onions to the mixture, along with the mixed ground meat.
- Gently mix with a wooden spoon until just combined; avoid overmixing to keep the patties tender.
4- Taste Test (Stekprov):
- In a clean Scanpan frying pan, heat neutral oil and butter.
- Fry a small piece of the meat mixture to check the seasoning, adjusting salt and pepper as needed.
5- Form Patties:
- Moisten hands and shape the mixture into 4-5 thick, round patties.
6- Sear Patties:
- Heat oil and butter in the frying pan, sear patties for 2-3 minutes on each side until a crust forms.
7- Finish Patties in Oven:
- Move patties to a Le Creuset baking dish.
- Bake in a Smeg oven at 100°C for 10-12 minutes.
8- Caramelize Onion Topping:
- In another Scanpan frying pan, heat neutral oil, add sliced onions, cook until soft and starting to brown.
- Season with salt, pepper, and butter for further caramelization.
9- Deglaze Patty Pan:
- Add water to the pan used for patties, simmer, and scrape the bottom with a metal spatula.
- Strain into a small saucepan for saucing.
10- Finish Onion Topping Sauce:
- Add deglazed liquid to the caramelized onions.
- Incorporate Japanese soy sauce and Worcestershire sauce.
- Heat until the sauce thickens slightly.
11- Garnish:
- Chop parsley and slice pickled cucumbers for serving.
