π 2.5 kg Pork Rib Slab, Paksu SearibitΓΌkki
π₯ 2 tsp Sweet Mustard, PΓ΅ltsamaa
π₯ Splash of White Wine Vinegar, possibly "ΓΓ€dikas"
π― Honey for basting, labeled "MESI"
Spice Mix:
π§ 2 tsp Salt, Himalayan pink, grinder
π¬ 2 tsp Brown Sugar
π§ 2 tsp Garlic Powder
πΆοΈ 2 tsp Paprika Powder
πΆοΈ 1 tsp Cayenne Pepper
πΆοΈ 1 tsp Black Pepper, from a pepper mill
BBQ Sauce:
π₯ 8 tbsp BBQ Sauce, Jack Daniel's
π§ 2 tbsp Butter
π 2 tbsp Apple Juice, Aura
For Corn Ribs:
π½ 3β4 pieces Corn on the Cob
π§ 4 tbsp Melted Butter
π§ 1 tsp Salt
πΆοΈ 2 tsp Paprika Powder
π§ 2 tsp Garlic Powder
πΏ 1 tsp Coriander Powder, optional
π§ 2 tbsp Grated Parmesan
π Lime sectors for serving
πΆοΈπ Chili-Mayo, mixed with Hellmann's mayonnaise
Instructions
1- Prepare the Ribs:
- Preheat your oven to 160Β°C.
- Remove the membrane from the pork rib slab for better flavor infusion.
2- Coat the Ribs:
- Lightly brush both sides with sweet mustard.
- In a small bowl, mix salt, brown sugar, garlic powder, paprika, cayenne, and black pepper.
- Pat the spice mix onto the mustard-coated ribs.
3- Bake the Ribs:
- Place ribs on aluminum foil, splash with white wine vinegar, and wrap tightly.
- Bake for 2.5 hours at 160Β°C.
4- Apply Glazing:
- Unwrap, drizzle and spread honey, then increase oven temp to 180Β°C.
- Bake another 20 minutes.
5- Finish the Ribs:
- Melt butter, mix with BBQ sauce, and if needed, thin with apple juice.
- Remove ribs, coat with BBQ sauce, and bake for another 10 minutes.
- Rest briefly, then slice into individual ribs.
6- Prepare the Corn Ribs:
- Cut corn vertically into quarters.
- Preheat air fryer to 190Β°C or oven to 200Β°C.
7- Coat and Cook Corn Ribs:
- Mix half of the melted butter with salt, paprika, garlic powder, and coriander (if using).
- Coat corn pieces with this spiced mixture.
- Fry in the air fryer for 10β12 minutes or bake for 15 minutes until crispy.
8- Finish Corn Ribs:
- Brush with remaining butter, grate parmesan, and serve with lime and chili-mayo.

Cook Time for Ribs: Total 3 hours (2.5 hours + 20 minutes + 10 minutes)
