Slavonian Shepherd's Stew, or "Čobanac," is a classic dish from Croatia's Slavonia region, celebrated for its rich flavors and hearty texture. Traditionally cooked slowly with three types of meat, it’s the perfect warming stew for colder days.
Ingredients
🧅 800g onions
🥕 3 carrots
🌿 200g celeriac root
🌿 150g parsley root
🦌 500g game meat venison, roe deer, wild boar
🥩 500g beef preferably round or rump cut
🍖 500g pork preferably round or shoulder cut
🌿 Bundle of parsley leaves and celery leaves
🧄 4 cloves of garlic
🍅 1 small can of pelati tomatoes
🍅 1 tablespoon tomato paste
🌶️ 1 tablespoon sweet ground paprika
🌶️ 1 teaspoon hot ground paprika
🧂 Salt and pepper precise quantities
🍷 200ml white wine
💧 2 liters of water
🥄 4 tablespoons lard
Instructions
1- Preparation:
- Start by finely chopping the onions, carrots, celeriac, and parsley root.
- Mince the garlic cloves.
- Dice the game meat, beef, and pork into bite-sized pieces.
2- Sautéing:
- In a large stew pot, heat the lard over medium heat.
- Add the chopped onions and sauté until translucent.
- Add the carrots, celeriac, and parsley root, stirring occasionally, until they start to soften.
3- Browning Meat:
- Add the diced game meat, beef, and pork to the pot.
- Sauté until the meat is browned on all sides.
- Add the minced garlic and stir for about 1 minute.
4- Building Flavor:
- Add the small can of pelati tomatoes and the tomato paste.
- Stir to combine, and allow the ingredients to cook together for about 5 minutes.
5- Spicing:
- Sprinkle in the sweet and hot paprika, salt, and pepper.
- Stir well to evenly coat the meat and vegetables with spices.
6- Simmering:
- Pour in the white wine and water, stirring to ensure everything is well mixed.
- Bring the stew to a boil, then reduce the heat to low.
7- Cooking:
- Let the stew simmer gently for approximately 3-4 hours.
- Occasionally stir the stew and add more water if necessary to keep all ingredients submerged.
8- Finishing Touch:
- In the last 30 minutes of cooking, add a bundle of parsley and celery leaves for extra flavor.
9- Serving:
- Once cooked to perfection, serve hot garnished with fresh parsley.
