Düşbərə is a beloved traditional Azerbaijani dish that brings together the warmth of a comforting soup with delicate, meat-filled dumplings. Ingredients
🌾 2 cups flour
🥚 1 egg
🧂 1 tablespoon salt
🚰 Water gradually added
🥩 150 grams minced meat
🐑 30 grams tail fat
🧅 1 small onion chopped
🌿 1 small bunch coriander chopped
🔳 1/4 teaspoon black pepper
🔴 1/4 teaspoon red pepper
🧂 1 teaspoon salt
🧈 80 grams butter
🍅 1 teaspoon tomato paste
🚰 1 liter water
🧂 0.5 teaspoon salt
🌿 Dried mint for garnish
Instructions
1- Prepare the Dough:
- Combine 2 cups of flour, 1 egg, and 1 tablespoon of salt in a glass mixing bowl.
- Gradually add water while kneading the dough by hand until smooth.
2- Rest the Dough:
- Cover the dough with cling film and let it rest for 5-10 minutes for better elasticity.
3- Prepare the Filling:
- In a small bowl, mix together 150 grams of minced meat, 30 grams of tail fat, chopped onion, coriander, black pepper, red pepper, and 1 teaspoon of salt.
- Blend thoroughly.
4- Portion and Roll Dough:
- Lightly flour a round wooden cutting board.
- Divide the dough into four small balls.
- Flatten one and roll it out thinly using a rolling pin.
5- Cut the Dough:
- Cut the rolled dough into small squares.
6- Fill and Shape Dumplings:
- Place a small amount of filling in each square's center.
- Fold two opposite corners over the filling, pinch to seal, and bring the other two corners together to form a dumpling.
7- Prepare the Soup Base:
- Melt 80 grams of butter in a pot, add tomato paste and a splash of water.
- Stir until blended.
8- Add Water and Boil:
- Add 1 liter of water to the pot, partially cover, and bring to a boil.
9- Cook the Dumplings:
- Add dumplings to boiling soup.
- Season with 0.5 teaspoon of salt.
10- Finish Cooking:
- Boil for 5-10 minutes until dumplings float to the surface.
11- Serve:
- Spoon into bowls and garnish with dried mint.
