Khorkhog

Khorkhog is a well-loved Mongolian dish traditionally cooked using heated stones. Although classically made with lamb, this version adapts the steaming technique to create a flavor-rich and tender dish with chicken liver and vegetables. Ingredients

🍠 50 g sweet potato, thinly sliced
🥬 200 g cabbage, shredded
🧅 1 medium onion, thinly sliced
🍏 1 medium apple, thinly sliced
🍗 200 g chicken liver
🧂 Salt
🌶️ Crushed black pepper
🍊 200 ml fresh orange juice
💧 Water
🪨 7-8 fist-sized river stones, heated until very hot

Instructions

1- Heat the Stones:

• Place the river stones on a metal rack situated above a gas stove.
• Heat them until they are extremely hot.

2- Prep the Pan:

• Gently heat the Le Creuset enameled cast iron pot on a separate burner.
• Once warm, remove it from the heat and set it on a wooden cutting board.

3- Prepare Ingredients:

• Thinly slice the sweet potato and onion.
• Shred the cabbage and thinly slice the apple.

4- Layer Ingredients:

• Lay the shredded cabbage as a base in the heated pot.
• Place the chicken liver on top of the cabbage.

5- Add Vegetables:

• Arrange the sliced apple, onion, and sweet potato over the chicken liver.

6- Season and Liquid:

• Season with salt and crushed black pepper.
• Pour in fresh orange juice and a sufficient amount of water for steam generation.

7- Stone Placement:

• Use tongs to carefully transfer the hot river stones into the pot over the ingredients.

8- Seal and Cook:

• Immediately cover the pot with its lid.
• Allow the steam and high temperature of the stones to cook the contents for at least 10 minutes.

9- Finish and Serve:

• Remove the stones carefully using oven mitts.
• Serve the Khorkhog hot.
