Instructions
1- Preheat Oven:
- Preheat your oven to 200°C.
2- Prepare Lamb Rack:
- Unpack the lamb rack from its packaging using scissors.
- Using a sharp knife, make strategic cuts along the backbone on both sides of the lamb rack to ensure even cooking.
3- Season Lamb:
- Place the lamb rack onto a baking tray or roasting pan.
- Generously rub the entire rack with oil to help the seasoning adhere.
- Season both sides of the lamb with a liberal amount of salt and freshly ground pepper.
4- Stuff Lamb Rack:
- Stuff the fresh rosemary sprigs into the cuts along the bone to infuse flavor during cooking.
- Similarly, tuck the fresh thyme sprigs into the cuts.
- Chop the garlic cloves finely and insert them alongside the herbs in the cuts.
5- Roast Lamb:
- Roast the lamb rack in the preheated oven for 15 minutes.
- Lower the oven temperature to 180°C and continue roasting until the internal core temperature reaches 58°C using a meat thermometer.
6- Rest and Serve:
- Once out of the oven, let the lamb rest until the core temperature rises to 63°C, ensuring perfect doneness.
- Remove the herb sprigs before serving.
- Carefully slice the lamb rack into individual portions along the bones.
