Crispy pork, slow roasts and countryside feast meats

If there’s one meat that screams Minas, it’s pork. The state is famous for dishes like leitão à pururuca (roast suckling pig with shatteringly crisp skin), costelinha de porco stewed or grilled, tutu com lombo, torresmo, and rich bean dishes finished with chunks of pork and crackling. Pork is described as “very present” in traditional mineiro cooking, appearing in both daily plates and special-occasion feasts.
