Savory “pites” from Epirus to the Peloponnese
Across mainland Greece, pites (savory pies) are everyday food and celebration food at once—portable, filling, and endlessly adaptable. They range from thin, crackly phyllo pies to “no-phyllo” village versions bound with cornmeal or batter. Classic fillings include greens (hortopita), spinach-and-cheese (spanakopita), cheese (tiropita), meat (kreatopita/kimadopita), chicken (kotopita), leeks, pumpkin, and mixed wild herbs.
