Ingredients

🍤 340g Cooked Wild Atlantic Cold Water Shrimp, peeled (President's Choice)
🧅 2 tablespoons Red Onion, finely diced
🍋 1 tablespoon Fresh Lemon Juice, from 1 whole lemon
🌿 1 tablespoon Fresh Dill, finely chopped, plus extra sprigs for garnish
🧂 1/4 teaspoon Salt
⚫️ 1/4 teaspoon Black Pepper
🌶️ 1/8 teaspoon Cayenne Pepper
🥄 2 tablespoons Mayonnaise (Brand: Not specified)
🥛 1-1/2 tablespoons Crème Fraiche or Sour Cream (Brand: Not specified)
🥖 1 whole Baguette, sliced into 5-6 pieces for toast
🧈 2-3 tablespoons Butter
🧄 1-2 Garlic Cloves, for infusing flavor into the toast
🥑 1/2 medium Avocado, sliced
🍤 2-3 pieces Whole Cooked Shrimp for garnish
🍋 1 Lemon Wedge for garnish

Instructions

1. Thaw and Prep:

   • Thaw the shrimp in the refrigerator until thoroughly defrosted. Pat the thawed shrimp dry using paper towels to remove excess moisture.

2. Marinate Onion:

   • Dice the red onion finely and combine with lemon juice in a small bowl. Let this mixture marinate for 15 minutes to soften the onion's flavor.

3. Prepare Shrimp Mixture:

   • Chop the shrimp into small, bite-sized pieces and transfer them into a large mixing bowl.
   • Add the marinated onion and lemon mixture, along with the chopped dill, into the shrimp.
   • Season with salt, black pepper, and cayenne pepper.
   • Mix in the mayonnaise and crème fraiche (or sour cream) until everything is well combined and creamy.

4. Toast Baguette:

   • Slice the baguette into pieces about 1/2 inch thick.
   • Melt butter in a frying pan over medium heat. Add garlic cloves to the pan.
   • Place the baguette slices into the pan and rub them gently against the garlic cloves for flavor. Toast until golden brown and crispy on both sides. Remove and set aside.
