🌶️ 20 Whole Black Peppercorns
⭐️ 3 whole Cloves

🍶 1 cup Vinegar

Instructions
1- Prepare Chiles:
- Pierce each chile (Chile Caribe or "güerito") 2-3 times with a fork.
- This allows the vinegar to penetrate more effectively.
2- Prepare Vegetables:
- Slice the carrots into rounds or decorative shapes.
- Chop the white onion into large wedges.
3- Sauté Aromatics:
- Heat a little vegetable oil in a large stainless steel pot.
- Add chopped onion and garlic cloves.
- Sauté for about 1 minute until the onion softens.
4- Add Chiles:
- Toss in the pierced chiles.
- Cook for another minute, stirring occasionally.
5- Add Carrots:
- Add the prepared carrots.
- Continue to sauté for an additional minute.
6- Add Spices:
- Mix in thyme, oregano, bay leaves, cloves, and whole black peppercorns.
- Stir until well-coated.
7- Add Vinegar:

9- Add Water & Salt:
- Add water and stir well.

10- Simmer:

11- Adjust Flavor:
- Sample the liquid.

12- Cool & Serve:
