Swedish Pickled Herring

Ingredients

For the Common Pickling Liquid:

🧴 1 deciliter Vinegar
💧 2 deciliters Water
🍭 3 deciliters Sugar

For the Leek & Dill Pickled Herring:

🐟 1 fillet Salted Herring
🌿 A small bunch Fresh Dill, chopped
🥬 1/2 Leek, split lengthwise, sliced 2mm thick
🍂 6 whole Allspice Corns, Santa Maria brand

For the Carrot & Red Onion Pickled Herring:

🐟 1 fillet Salted Herring
🥕 1 Carrot, peeled, halved lengthwise, thinly sliced
🧅 1 Red Onion, halved, thinly sliced
🔨 6 Allspice Corns, crushed, Santa Maria brand

Instructions

1- Prepare the Pickling Liquid:

• In a generic stainless steel small saucepan, combine vinegar, water, and sugar.
• Heat on the stove, stirring until sugar fully dissolves.
• Cool the liquid completely before use, optionally chilling in the refrigerator.

2- Vegetable Preparation:

• For the Leek & Dill: Chop dill and slice leek, then place in a white plastic storage container.
• For the Carrot & Red Onion: Slice carrot and red onion, then place in a second container.

3- Herring Preparation:

• Use paper towels to pat dry the salted herring fillets.
• Slice each fillet into 1 cm pieces and distribute into their respective containers with prepared vegetables.

4- Allspice Addition:

• Add whole allspice corns to the leek and dill mixture.
• Crush allspice corns lightly with a green/grey stone mortar and pestle, then add to the carrot and red onion mixture.

5- Combine Ingredients:

• Pour the cooled pickling liquid over each container's contents, ensuring complete submersion.
• Seal containers with lids tightly.

6- Resting:

• Refrigerate for at least 24 hours, although a 3-day pickling period is recommended for optimal flavor.
• Occasionally invert or shake the containers to evenly distribute flavors.
