Ingredients
š 4 slices white sandwich bread, toasted, homemade loaf or your choice of brand
š„ 2 avocados, mashed
š Juice from 1 lemon for avocado mash
š§ A pinch of salt for avocado mash
š„ 5 slices bacon from Brianna at Vessel Meats
š¦ 8 oz cooked lobster meat, roughly chopped from Tangier Lobster Company
š„¬ 4 leaves romaine lettuce, shredded

1 ripe tomato, thinly sliced
š¶ļø Freshly cracked black pepper for tomato seasoning
For the Citrus Mayonnaise:
š„ 2 egg yolks
š„ 1 tsp Dijon mustard
š Zest and juice from 1 lemon
š Zest from 1 orange
šæ 2 tsp chopped tarragon
š¢ļø 1 cup canola oil or Safflower oil as an alternative
š§ & š¶ļø Salt & pepper to taste
Instructions
1- Cook the Bacon:
- Preheat the oven to 400°F (200°C).
- Line a baking sheet with aluminum foil.
- Lay the bacon slices flat on the lined baking sheet.
- Bake until crispy, about 15-20 minutes. Remove and drain on paper towels.
2- Prepare the Citrus Mayonnaise:
- Stabilize a glass mixing bowl with a tea towel beneath it.
- Add egg yolks, a pinch of salt, and Dijon mustard. Squeeze in juice from half a lemon.
- Whisk together, then slowly drizzle in oil while whisking until thick and emulsified.
- Add orange and lemon zests with chopped tarragon. Season with pepper. Whisk again and set aside.
3- Prepare the Avocado Mash:
- Halve and pit avocados, then scoop flesh into a bowl.
- Add lemon juice and salt. Mash to a chunky consistency.
4- Prepare Remaining Ingredients:
- Chop lobster meat and shred lettuce.
- Slice tomato thinly.
5- Assemble the Lobster BLT:
- Toast bread slices in butter in a frying pan until golden on one side.
- Spread mashed avocado on untoasted sides.
- Layer tomato slices, seasoned with salt and pepper, on two slices.
- Add bacon pieces, topped with shredded lettuce.
- Gently mix lobster with citrus mayonnaise and add over lettuce.
- Top with remaining bread, pressing gently. Cut each sandwich as desired.
