Instructions
1- Prepare the Kasnudel Dough:
- On a clean work surface, pour the universal flour into a mound, creating a well in the center.
- Add a pinch of salt and crack an egg into the well.
- Gradually mix the flour into the egg using a fork, incorporating warm water slowly until a shaggy dough forms.
2- Knead the Dough:
- Knead the dough by hand for 10-15 minutes until smooth and elastic.
- Lightly oil a glass bowl, place the dough in it, cover with cling wrap, and refrigerate for at least 30 minutes.
3- Prepare Mark's Choice Filling:
- In a frying pan, brown the pork/beef mince over medium heat, ensuring it caramelizes slightly.
- Add garlic and mushrooms, cooking until softened.
- Stir in chopped leek, thyme, lemon thyme, and chives. Season with salt and pepper.
4- Combine and Cool the Filling:
- Set meat mixture aside to cool. Toast bread cubes in melted butter in a separate saucepan, adding milk to soak.
- Combine the soaked bread, quark, and meat mixture, adjusting seasonings to taste.
5- Prepare the Traditional Filling:
- Toast bread cubes in melted butter and let soak in milk for 5-10 minutes.
- Mix in quark, parsley, brown mint, and leek, seasoning with salt and pepper.
6- Shape and Fill Dumplings:
- After resting, roll out dough on a floured surface until thin.
- Cut and lay the dough over filling sections, sealing edges well.
- Cut out half-moon shapes and crimp edges with fingers for a traditional look.
7- Cook the Kasnudeln:
- In a large pot, simmer salted water gently, adding the dumplings in batches.
- Cook for 4-5 minutes until dumplings float and are tender.
- Remove with a slotted spoon and arrange on a serving dish.
8- Prepare Butter Sauce and Serve:
