Antiguan-Style Mashed Green Papaya

💧 Water, for boiling papaya


Instructions

1- Prepare the Papaya:

  • Using a large kitchen knife, chop off both the head and bottom ends of the green papaya.
  • Peel the skin with a vegetable peeler.
  • Halve the papaya lengthwise and scoop out the seeds and inner membrane.
  • Dice the papaya into 1-inch cubes. Rinse under cold running water in a metal colander.

2- Cook the Papaya:

  • Boil water in a large pot on the stove. Add 1/2 tablespoon of salt.
  • Add the diced papaya cubes to the boiling water. Cook until tender.
  • Drain the papaya and mash it in the pot until smooth.

3- Prepare the Aromatics:

  • Dice the onion finely, peel and mince the garlic.

4- Sauté and Combine:

  • Heat avocado oil in a small frying pan over medium heat.
  • Sauté onions and garlic until the onions are translucent.
  • Stir in turmeric and black pepper, mixing well.
  • Combine the mashed papaya with the sautéed mixture and stir thoroughly.
  • Cover and let simmer for a few minutes to allow flavors to meld.

5- Serve:

  • Serve hot on a white rectangular plate for a delightful culinary presentation.
