๐Ÿง„ 3 Garlic Cloves, minced
๐Ÿ  Thumb-sized piece of Ginger, minced
๐ŸŒถ๏ธ 2 Birdโ€™s Eye Chillis, sliced
๐ŸŒฟ Handful of Fresh Curry Leaves
๐Ÿ‚ 1 Stick of Cinnamon
โญ 3 Star Anise e.g., Rajah
๐Ÿƒ 2 Pandan Leaves
๐Ÿฅฅ 400ml Coconut Cream e.g., Natureโ€™s Charm

Instructions

1- Prep the Spices:

  • In a dry frying pan over medium heat, toast the cinnamon stick, fennel seeds, basmati rice, brown mustard seeds, black peppercorns, cloves, cardamom pods, and coriander seeds until fragrant.
  • Immediately transfer to a small bowl.

2- Grind Spices:

  • Use a Ninja food processor to grind the toasted spices along with the chilli powder until fine.

3- Prepare Aromatics:

  • Chop the red onion, mince the garlic, and ginger.
  • Slice the bird's eye chillies.

4- Sautรฉ Aromatics:

  • Heat ghee in a large oven-safe pan.
  • Add onions and garlic, sautรฉ until translucent.
  • Add ginger and chillies, stirring until fragrant.

5- Cook Pork:

  • Add pork ribs to the pan, coating with spice mix.
  • Add star anise, cinnamon quills, and knotted pandan leaves.
  • Stir in tamarind paste, coconut cream, and enough water to cover the ribs.

6- Braise in Oven:

  • Preheat oven to 160ยฐC (325ยฐF).
  • Transfer the pan to the oven and cook for 1 hour and 30 minutes until pork is tender.

7- Finish Sauce:

  • Remove pork from the pan.
  • Simmer sauce on hob, adjusting sweetness with sugar, if needed.

8- Temper Curry Leaves:

  • In a small pan, heat oil until shimmering.
  • Add curry leaves, careful of splatter, swirling for flavor.

9- Serve:

  • Place pork ribs in a serving bowl, drizzle with sauce, and garnish with tempered curry leaves and fresh chilli slices.
