Servings: 6 Dampfnudeln
Recipe Method:
1. Start by placing 500g of flour into a large mixing bowl.
2. Crumble 25g of yeast over the flour and evenly distribute it.
3. Crack two eggs and add them to the bowl along with 80g of softened butter and a pinch of salt.
4. Warm the milk to room temperature and start combining it into the flour mixture to form a dough. Knead until the dough is smooth and elastic.
5. If making both sweet and savory Dampfnudeln, now is the time to divide your dough in half. Set aside the savory half in an extra bowl.
6. For the sweet dough, add 30g of sugar and knead it into the dough.
7. Cover both doughs with a cloth and allow them to rise in a warm place for 30 minutes.
8. After the dough has doubled in size, transfer it onto a floured surface and divide into six equal pieces.
9. For savory Dampfnudeln, melt a generous amount of butter in one pan and sprinkle in two pinches of salt. For the sweet ones, in a separate pan, melt butter and stir in a scant tablespoon of sugar. Add enough milk to cover the bottom of the pans by half a centimeter, heating until combined.
10. Place the dumplings into the respective pans, cover with lids, and cook on low heat for about 20-25 minutes. Avoid opening the lid during this time.
11. Once the Dampfnudeln have a golden bottom and the liquid has evaporated, they are ready to serve.
