Ingredients:
For the Citrus Glaze:
- 1/4 cup freshly squeezed lemon juice
- 1/4 cup freshly squeezed orange juice
- 1/4 cup freshly squeezed lime juice
- Zest from 1 lemon, 1 orange, and 1 lime
- 1/4 cup rice vinegar
- 2 tablespoons Balducci's honey (or any quality honey)
For the Salmon:
- 2 salmon fillets
- 2 tablespoons olive oil
- Sea salt, to taste
- Freshly cracked black pepper, to taste
For the Peach & Radish Relish:
- 2 fresh peaches, diced
- 1/4 cup radishes, thinly sliced
- 2 tablespoons red onion, finely chopped
- Fresh cilantro, chopped, to taste
- Juice of 1 lime
- 1/4 cup basil, chopped
- 1/4 cup bell peppers, diced
- Salt and pepper, to taste

Instructions:
1. Begin by preparing the citrus glaze. In a saucepan over medium heat, combine the lemon juice, orange juice, lime juice, citrus zest, rice vinegar, and honey. Gently stir the mixture and bring it to a simmer. Reduce the heat and let it simmer until it has reduced by half and thickens enough to coat the back of a spoon. Remove from heat and set aside.
2. Preheat your grill or grill pan to a high heat. Make sure it's very hot for those desired grill marks.
3. Brush the salmon fillets with olive oil and season both sides with sea salt and freshly cracked black pepper.
4. Place the salmon on the grill, skin side down, at an angle. Grill for about 3 minutes, then flip and grill for an additional 3 minutes, or until it reaches your desired doneness.
5. While the salmon is grilling, prepare the Peach & Radish Relish. In a bowl, combine diced peaches, sliced radishes, chopped red onion, cilantro, lime juice, basil, and bell peppers. Season the relish with salt and pepper to taste, and mix well.
6. Once the salmon is cooked, let it rest for a few minutes.
7. Serve the grilled salmon with a generous drizzle of the citrus glaze and a side of the Peach & Radish Relish.
Cooking Tips:
- Make sure your salmon fillets are of equal thickness for even cooking.
- Grilling the salmon at an angle creates beautiful grill marks.
- Always start with a preheated grill to prevent sticking and achieve a nice sear.
- If you don't have a grill, a well-heated grill pan on the stove works great as well.
