This Scandinavian-style Köttfärssoppa (Ground Meat Soup) is a hearty and flavorful dish that showcases the richness of Swedish cuisine. Ingredients
🥩 500g Ground Beef
🫒 1 tbsp Oil, for frying
🧈 1 tbsp Butter, for frying
🧅 2 Yellow Onions
🥕 2 Carrots
🥔 4 Firm Potatoes
🥬 1 Leek
🌱 1 piece Celeriac
🍈 1 piece White Cabbage
🧄 2 Garlic Cloves
🍅 2 tbsp Tomato Paste Zeta (Fernando di Luca)
🥣 1 liter Veal Stock
💧 3 dl Water, adjust for consistency
🌿 3 Bay Leaves
🌿 A few sprigs Fresh Thyme
🧂 Salt
🌶️ Black Pepper
🥛 Sour Cream, for serving
🥖 Bread, for serving
Instructions
1- Prepare the Meat:
- In a Le Creuset Dutch oven, heat the oil and butter over medium-high heat.
- Add in the ground beef and cook until well browned, ensuring all liquid has evaporated, and the meat develops a rich flavor.
2- Chop the Vegetables:
- While the meat is browning, dice the yellow onions, firm potatoes, celeriac, and garlic cloves.
- Slice the carrots into rounds, chop the leek into soup-size pieces, and shred the white cabbage.
- Make sure to rinse the leek thoroughly to remove any soil.
3- Add Tomato Paste:
- Once the meat is browned, add the tomato paste and stir.
- Cook briefly to enhance its flavor.
4- Combine Vegetables:
- Add the chopped vegetables to the pot.
- Season lightly with salt and black pepper.
5- Add Aromatics and Liquid:
- Incorporate the bay leaves and fresh thyme sprigs.
- Pour in the veal stock and bring the mixture to a boil.
6- Simmer:
- Reduce heat to low, cover with a lid, and let it simmer for about 25 minutes.
- Allow the flavors to meld.
7- Adjust Consistency and Seasoning:
- Check the tenderness of the vegetables.
- Adjust the soup's consistency by adding water if needed.
- Season with additional salt and pepper.
8- Remove Herbs and Serve:
- Discard the thyme sprigs and bay leaves.
- Ladle the soup into bowls, garnish with a dollop of sour cream, and serve with bread.
