Traditional Bulgarian Karnacheta: Juicy Lamb and Beef Sausages
Experience the flavors of Bulgaria with these succulent homemade Karnacheta. Made with a blend of lamb and beef mince, aromatic spices, garlic, onion, and a splash of red wine, these sausages promise a delightful grilling adventure.
Ingredients
🐑 0.75 kg Lamb or Sheep Minced Meat
🐄 0.25 kg Beef or Veal Minced Meat
🧅 1 Onion peeled
🌶️ 1 teaspoon Black Pepper
🌶️ 1 teaspoon Red Pepper Paprika
🌶️ 1 teaspoon Hot Red Pepper optional
🧄 3-4 cloves Garlic
🍷 150 ml Red Wine
🧂 17 g Cooking Salt
🌭 Natural Sausage Casings prepared with water
Instructions
1- Prepare the Aromatics:
- Peel and chop the onion and garlic cloves.
2- Blend Ingredients:
- In a small blender or chopper, combine the onion, garlic, black pepper, red pepper, hot red pepper (if using), and cooking salt. Blend until finely minced.
3- Add Liquid and Meat (First Blend):
- Pour half of the red wine into the blender. Add a portion of the minced lamb/sheep and beef meat. Blend until well combined.
4- Add Remaining Meat (Second Blend):
- Transfer the contents from the blender to a large mixing bowl. Add the remaining red wine and minced meat.
5- Mix the Meat Mixture:
- Using gloved hands, mix the meat, blended aromatics, and wine thoroughly until evenly incorporated and sticky.
6- Rest the Mixture:
- Cover the meat mixture and refrigerate it overnight to allow the flavors to meld.
7- Prepare Casings:
- Rinse the natural casings in water to prepare them for stuffing.
8- Stuff the Sausages:
- Attach the casing to the sausage stuffer's nozzle. Push the meat mixture into the casing, squeezing gently to avoid air pockets. Twist to form sausages of desired length.
9- Chill (Optional but Recommended):
- Refrigerate the formed sausages for a short period to help them firm up before grilling.
10- Grill the Sausages:
- Preheat a grill. Place the sausages on it, cooking until evenly browned with nice grill marks. Adjust cooking time for preference on juiciness or crispiness.
