Ingredients
For the Fried Herring:
🐟 16 herring fillets
🧂 Salt
🍞 Breadcrumbs
🌾 Wheat flour
🛢️ Rapeseed oil Zeta Raps Olja
🧈 Butter
For the Dill Butter:
🧈 50 g butter room temperature
🌿 1 bunch fresh dill
🥄 1 tsp Dijon mustard
⏳ White pepper from Zassenhaus mill
For the Mashed Potatoes:
🥔 1 kg potatoes
🧈 2 tbsp butter
🥛 1 dl milk
🥛 1 dl cream
🧂 Salt
For the Pressed Cucumber:
🥒 1 cucumber
🧂 ½ dl 12% vinegar
🍬 1 dl granulated sugar
💧 1 ½ dl water
🌱 1 tsp yellow mustard seeds
Instructions
1- Prepare the Dill Butter:
- Blend 50g of room-temperature butter, 1 tsp Dijon mustard, and a bunch of fresh dill in a small food processor.
- Season with white pepper to taste. Set aside.
2- Prepare the Mashed Potatoes:
- Boil potatoes until tender, drain, and let them sit to remove excess moisture.
- Heat milk and cream in a saucepan.
- Rice the potatoes using a potato ricer and combine with butter and warm milk-cream mixture. Season with salt and mix until smooth and fluffy.
3- Prepare the Pressed Cucumber:
- Thinly slice the cucumber.
- Make a pickling liquid by boiling vinegar, sugar, and water until sugar dissolves. Add mustard seeds.
- Pour over cucumber slices in a jar, cool, and refrigerate.
4- Prepare and Fry the Herring:
- Combine breadcrumbs and flour on a tray. Place 8 fillets with skin-side down, spread dill butter, and cover with remaining fillets.
- Coat fillets with seasoning and breadcrumb-flour mixture.
- Heat rapeseed oil and butter in a frying pan, fry herring in batches for 2 minutes per side.
5- Assemble and Serve:
- Place two herring fillets on a plate along with mashed potatoes and pickled cucumber.
- Garnish with a lemon wedge and fresh dill. Drizzle the pan's browned butter over the herring.
