Embark on a culinary journey to Portugal with Bacalhau à Lagareiro, a classic dish that is a much-loved staple in Portuguese cuisine. Ingredients
🐟 4 Cod loins, Postas de Bacalhau
🥔 800g New potatoes
🥬 1 bunch Turnip greens
🧄 8 Garlic cloves
🫒 2 dl Olive oil, additional for sautéing and finishing
🧂 Salt
🌶️ Pepper
Instructions
1- Preheat & Prepare Potatoes:
- Preheat your AEG oven to 180°C (356°F).
- Wash the new potatoes thoroughly.
- Place them in a glass baking dish, season generously with salt, and bake for 25 minutes until tender.
2- Boil Turnip Greens:
- Bring a stainless steel pot of water to a boil.
- Add the turnip greens and cook for a few minutes until tender.
- Once cooked, drain using a metal strainer and set aside.
3- Prepare and Grill Cod:
- Drizzle the cod loins with olive oil, ensuring they’re well-coated.
- Using a grill or a grill pan, lightly grill the cod pieces on each side to achieve distinct char marks.
4- Bake Cod:
- Transfer the grilled cod loins to a white ceramic baking dish.
- Place in the AEG oven alongside the potatoes and bake for an additional 25 minutes at 180°C.
5- Sauté Turnip Greens:
- In a non-stick frying pan, heat a generous amount of olive oil.
- Add the sliced garlic cloves and sauté until the garlic is fragrant and golden.
- Introduce the drained turnip greens to the pan, sautéing everything together.
- Season with a sprinkle of salt and pepper.
6- Smash Potatoes:
- Once the potatoes have cooked, use a clean kitchen cloth or a potato masher to gently press and crack each potato, allowing them to absorb the flavorful olive oil dressing.
7- Assemble and Serve:
- Lay the sautéed turnip greens as a bed on a white ceramic serving platter.
- Arrange the baked cod loins on top of the greens and surround with the smashed new potatoes.
- Drizzle generously with the garlic-infused olive oil from the frying pan, distributing crispy garlic pieces over the top for an added punch of flavor.
