Ingredients
š 2-3 sprats from a can of Riga Gold sprats in oil
š 1 whole wheat bun
š„ 1/2 avocado, mashed
š„ 1 egg, fried

1 slice of tomato

Sliced red onion
š„¬ 1 lettuce leaf
š« A small amount of oil
š§ A pinch of salt
ā« A pinch of black pepper
š¶ļø A drizzle of red sauce
Instructions
1- Toast the Bun:
- Slice the whole wheat bun horizontally.
- Heat a small amount of oil in a non-stick frying pan over medium heat.
- Place the bun halves, cut-side down, in the pan. Toast until golden brown, then flip and toast the other side briefly. Set aside.
2- Fry the Egg:
- In the same frying pan, place a metal egg ring.
- Crack the egg into the egg ring, season with a pinch of salt and black pepper.
- Fry until the egg white is set and the yolk reaches your desired consistency. Carefully remove the egg ring and set the egg aside.
3- Assemble the Sandwich:
- Mash half an avocado in a small bowl, keeping some chunky texture.
- Spread the mashed avocado over the bottom toasted bun half.
- Drizzle a desired amount of red sauce over the avocado.
- Layer the sliced red onion and tomato on top.
- Add the fried egg, then drizzle with more red sauce and sprinkle additional black pepper if desired.
- Arrange 2-3 sprats on top of the egg.
- Finish with a lettuce leaf.
- Place the top toasted bun half on the stack to complete the sandwich.
