Mango Glazed Ham:

Instructions

- Grate the cheese into a mixing bowl.
- Add diced onion, diced sweet pepper, mayonnaise, Bajan pepper sauce, onion and garlic powders.
- Season with salt and pepper, then mix until creamy and well-combined.
Fishcake Pancake:
- Boil and debone the salted codfish, shred into fine flakes.
- Mix with diced onions, minced garlic, herbs, spices, and Bajan pepper sauce.
- Incorporate flour and baking powder, adding water gradually for thick batter consistency.
- Fry spoonfuls of batter into pancakes until golden brown, draining on paper towels.
Mango Glazed Ham:
- Score the ham, inserting a clove into each diamond.
- Set in a baking dish with onion, garlic, parsley, thyme, covered with foil.
- Bake, then glaze with a mixture of ketchup, vinegar, powders, mango juice, and brown sugar.
