Brioche Bun:
π₯£ 500g Flour
π₯ 2 Eggs
π¬ 50g Sugar
π§ 8g/1 tsp Salt
π₯ 1 Packet Yeast (Brand: fermipan)
π§ 100g Butter (cubed)
π₯ 200g Milk (warmed)
Egg Wash:
π₯ 1 Egg
π₯ 2 tbsp Milk
Cole Slaw:
π₯¬ 1/4 head Purple Cabbage (shredded)
π₯¬ 1/4 head White Cabbage (shredded)
π₯ 2 Carrots (shredded)
π 2 tsp Lime Juice
π¬ 2 tbsp White Sugar
π― 3 tbsp Mustard
π₯ 3 tbsp Mayonnaise
π§ 1 tsp Garlic Powder

Caramelized Onion Mayo:
π₯ 200g / 7 oz Mayonnaise

2 small Onions (diced)
π§ 1 tbsp Butter
π§ Salt

Instructions
1- Prepare the Pineapple Brown Sugar Glazed Ham:
- Preheat oven to 385Β°F.
- Place thawed ham in an oven-safe dish and score it to create a diamond pattern.
2- Glazing and Baking:
- Insert cloves at some of the diamond intersections.
- Mix pineapple juice, brown sugar, garlic powder, onion powder, black pepper, BBQ sauce, and ketchup in a bowl.
3- Baking the Ham:
- Pour half the glaze over the ham.
- Add water to the pan, cover with foil, and bake for 1 hour.
4- Finish and Rest:
- Remove foil, pour remaining glaze, and bake for an additional 30-45 minutes until caramelized.
- Let the ham rest for 30 minutes before slicing.
5- Prepare Brioche Buns:
- Bloom yeast in warm milk with some sugar until puffy.
- In a stand mixer, combine flour, sugar, and salt.
6- Kneading the Dough:
- Add remaining milk, eggs, and yeast to the flour mixture.
- Stream in cubes of butter while kneading for 8-10 minutes until smooth.
7- Proof and Shape the Dough:
- Let dough proof in a greased bowl for 1.5 hours.
- Divide dough into 10 pieces, shape into balls, and proof again for 20-25 minutes.
8- Baking the Buns:
- Preheat oven to 385Β°F, apply egg wash, and bake for 20-25 minutes.
- Cool buns after baking.
9- Prepare Cole Slaw:
- Mix lime juice, sugar, mustard, oil, mayonnaise, garlic powder, onion powder, salt, and pepper.
- Add shredded cabbages and carrots to the dressing, mix well, and refrigerate.
10- Prepare Caramelized Onion Mayo:
- Caramelize onions in melted butter on low heat for 30 minutes.
- Mix caramelized onions with mayonnaise, salt, and pepper.
11- Assembling the Ham Cutter:
- Slice brioche buns in half.
- Spread caramelized onion mayo on the bottom half.
- Add sliced glazed ham.
- Top with coleslaw.
- Cap with the top bun.
