Ingredients
🫘 500g pinto beans, Paisano
🧄 1 clove garlic
🧅 1 small onion, divided use
🧂 Salt de grano, coarse
💧 Water, enough to cover
🌶️ 300g pork chorizo, AG
🧈 1 tablespoon pork lard
🌶️ Pickled jalapeño peppers, La Costeña
🌶️ 1 chipotle pepper in adobo, La Costeña
🧀 150g Chihuahua cheese, La Vaquita, grated
Instructions
1- Clean the Beans:
- Inspect and rinse 500g of pinto beans, removing any impurities.
2- Soak the Beans:
- In a bowl, cover the beans with enough water and let them soak for 4 hours or overnight. Drain the water.
3- Cook the Beans:
- In a clay pot, combine the soaked beans, 1 clove of garlic, a piece of onion, and enough water to cover the beans. Cook on high heat.
4- Manage Foam:
- Stir intermittently, skimming off any foam that forms.
- Cook for about 1 hour and 10 minutes until beans are nearly tender, then add salt.
5- Finish Cooking:
- Allow beans to cook with salt for an additional 5 minutes.
- Set aside once done.
6- Prepare Ingredients:
- Finely chop a clove of garlic and 1/4 of the onion.
- Grate 150g of Chihuahua cheese.
7- Sauté Aromatics:
- In a small pot, heat 1 tablespoon of pork lard.
- Sauté the chopped onion and garlic until translucent.
8- Cook Chorizo:
- Add 300g of pork chorizo to the pot.
- Break it apart and cook thoroughly, stirring frequently.
9- Purée Beans:
- Drain the beans, reserving the cooking liquid.
- Blend the beans with pickled jalapeños, a chipotle pepper, and some reserved liquid to a smooth consistency.
10- Combine Ingredients:
- Pour blended beans into the pot with the chorizo.
- Repeat blending with remaining beans and combine all in the pot.
11- Simmer and Stir:
- On medium heat, stir and mash the mixture to integrate the chorizo fully, for about 10 minutes.
12- Add Jalapeños and Cheese:
- Incorporate additional pickled jalapeños and most of the grated cheese while stirring.
13- Final Simmer:
- Simmer for another 5 minutes until cheese is melted.
- Adjust seasoning if necessary.
14- Serve and Garnish:
- Serve warm.
- Garnish with reserved cheese and extra jalapeños.
