Ingredients:
- 8 quarts of water
- 16 teaspoons Old Bay seasoning (2 teaspoons per quart of water)
- 3 lbs of red potatoes (new potatoes), quartered
- 2 lbs of smoked sausage, sliced into chunks
- 8 ears of corn, halved or quartered
- 2 lbs of fresh shrimp, preferably caught off the coast of South Carolina (wild-caught)
- Optional: Crab or other seafood additions as desired
Prep Time: 15 minutes
Cook Time: 33 minutes
Total Time: 48 minutes
Servings: 10-12 people
Equipment:
- 16-quart pot
- Large strainer or colander
- Timer
Instructions:
1. Fill a 16-quart pot halfway with water (8 quarts) and bring it to a boil.
2. Once boiling, add 16 teaspoons of Old Bay seasoning and stir well.
3. Add the quartered red potatoes and the sliced smoked sausage into the pot. Allow them to boil for about 20 minutes.
4. After 20 minutes, add the corn to the pot. Set your timer for an additional 10 minutes.
5. As the corn cooks, prepare the fresh shrimp by cleaning and deveining them if not already done.
6. When the timer for the corn indicates there are only 3 minutes left, add the shrimp to the pot.
7. Cook the mixture for 3 minutes - until the shrimp are pink and cooked through.
8. Carefully drain the liquid from the pot using a large strainer or colander.
9. Spread out the Low Country Boil onto a paper-covered table or on serving platters, and allow everyone to serve themselves family-style.
