Ingredients:
For the Dough:
- 2 1/2 cups all-purpose flour
- 1/3 cup sugar
- 3/4 cup lukewarm milk
- 4 1/2 tablespoons melted butter
- 1 egg
- 5 1/2 teaspoons active dry yeast
- 1 tablespoon vanilla extract
- 1 teaspoon lemon peel, grated
- A pinch of salt
- 3 to 4 pounds of plums and apples (mixed)
For the Streusel Topping:
- 14 tablespoons cold butter, cut into small cubes
- 1/2 tablespoon vanilla extract
- 2 cups all-purpose flour
- 1 1/3 cups sugar
- 1 teaspoon cinnamon powder
Additional:
- Extra cinnamon for sprinkling (optional)
- Whipped cream for serving
Prep Time: 30 minutes
Cook Time: 25-30 minutes
Total Time: 55-60 minutes plus dough rising time of approximately 2 hours and 15 minutes
Equipment:
- Stand mixer or mixing bowl
- Dish towel
- Apple slicer (optional)
- Baking sheet
- Rolling pin
Instructions:
1. In the bowl of your stand mixer, combine 2 1/2 cups flour, then create a well in the center. Into the well, add 1 tablespoon sugar, the yeast, and half of the lukewarm milk. Gently mix these ingredients together, gradually incorporating flour from the sides of the well. Cover the bowl with a clean dish towel and allow the mixture to sit in a warm spot for about 15 minutes, until slightly frothy.
2. Add the remaining sugar, melted butter, egg, the rest of the milk, vanilla extract, lemon peel, and a pinch of salt to the bowl. Knead with the stand mixer or by hand for about 10 minutes, or until the dough becomes smooth and elastic.
3. Cover the bowl with a kitchen towel and let the dough rise in a warm place for approximately two hours, or until it has doubled in size.
4. While the dough is rising, wash the plums and apples. Cut off the stems and pit the plums, then slice each plum half into three to four pieces. Peel the apples, remove the cores, and slice thinly. Halve each apple slice if using an apple slicer, for thinner pieces.
5. Preheat the oven to the temperature specified by the original recipe (usually around 350°F or 175°C). Then prepare the streusel topping. In a large bowl, combine the cold butter cubes, flour, sugar, vanilla extract, and cinnamon powder. Mix and knead into a crumbly consistency.
6. Grease a baking sheet and dust it with a bit of flour. Roll out the risen yeast dough on the prepared baking sheet. Arrange the apple slices and plum slices on top of the dough, overlapping or positioning them next to each other, as desired.
7. Optionally, sprinkle the fruit with additional cinnamon. Then, evenly distribute the prepared streusel topping over the fruit.
8. Bake in the preheated oven for 25-30 minutes, or until the streusel is golden and the fruit is tender.
9. Serve the cake warm, complemented with a generous dollop of whipped cream. Enjoy and savor a slice of German culinary tradition. Guten Appetit!
Cooking Tips:
- If using a different variety of plum, ensure they are ripe but firm to hold up during the baking process.
- Allow the cake to cool for several minutes before slicing to let the fruit set.
