Ingredients:
- Fresh berries (strawberries, blueberries, raspberries, blackberries)
- Vodka (standard 40% ABV recommended)
- Water
- Granulated sugar
- Gloves (optional, for handling berries to avoid stains)
Equipment:
- 4 Mason jars (half-quart size)
- Strainer
- Coffee filter
- Funnel
- Small saucepan
- Spoon
- Measuring cups
Prep Time: 30 minutes
Cook Time: 10 minutes for the syrup, plus infusing time (2 weeks to a month)
Total Time: The active time is about 40 minutes, with a long infusing wait.
Servings: This will depend on the amount of each fruit used and the desired strength of the liqueur, but typically, you'll get about 1 quart of each berry liqueur.
Instructions:
1. Begin by thoroughly rinsing and washing your berries. Remember to remove the stems from strawberries. You can use gloves to avoid stains while handling the berries.
2. Fill each Mason jar with about 1.5 cups of one type of berry (ensuring you have separate jars for each type).
3. Pour vodka over the berries until the Mason jar is filled right to the edge. The goal is to have the fruit completely submerged in vodka.
4. Seal the jars tightly and give each a good shake. Let these infuse in a cool, dark place for 2 weeks up to a month, depending on your patience and desired intensity.
5. Once the infusion period is complete, prepare to strain. Place a coffee filter in a funnel over a clean container and carefully pour the vodka from the jars, discarding the now colorless, flavorless fruit.
6. To create the syrup, combine 1 cup of fresh berries with 1.5 cups of water in a small saucepan. Bring this to a boil, then reduce to a simmer. Make sure to mash the berries to release their juices. After simmering and evaporating some water, you should be left with a flavorful berry infusion. Strain this through a mesh strainer, and then again through a coffee filter.
7. Take the hot filtered berry water and mix in an equal amount of sugar to create a simple syrup. Stir until the sugar has fully dissolved and the mixture is clear.
8. Finally, combine the berry-infused vodka with the berry syrup. Start with a three-to-one ratio and adjust to taste. You can always add more syrup but can't take it away once added.
9. Once you've reached the desired sweetness, your homemade berry liqueurs are ready to be enjoyed!
Cooking Tips:
- When adding the syrup to the infused vodka, do it incrementally. Taste and adjust the sweetness according to your preference.
- If you prefer a stronger berry flavor or a sweeter liqueur, feel free to adjust the amount of fruit and sugar accordingly.
