Ingredients
🦐 700g 1½ lbs raw shrimp, headless with shell
🍋 ½ cup freshly squeezed lime juice
🧂 Sea salt, approximately 1 tsp
🌶️ Black pepper, approximately ½ tsp
🧅 ½ red onion, diced
🌶️ Chile piquín, crushed, approximately 1 tsp
🌶️ Serrano chilies, thinly sliced, 1-2 chilies
🥒 1 large cucumber, peeled, deseeded, and diced
🌿 1 bunch cilantro leaves, chopped
🍅 250g ½ lb tomatoes, diced
🥑 1 avocado, diced
🧂 Splash of Maggi Jugo Seasoning Sauce, Maggi brand
🍅 ¼ cup Clamato, Tomato Cocktail from Concentrate, Clamato brand
🍶 Mayonnaise, approximately 2 tbsp, for serving
🌶️ Bottled hot sauce, e.g., Huichol or Guacamaya, for serving
Instructions
1- Prepare the Shrimp:
- Peel the shrimp, removing the head and shell. Devein each shrimp by making a shallow cut along its back and pulling out the intestinal tract.
- Place the shrimp in ice water, then pat dry and cut into small, bite-sized pieces.
2- Marinate the Shrimp:
- Transfer shrimp to a glass mixing bowl.
- Pour lime juice over the shrimp until just coated, then season with sea salt and black pepper. Mix with a spatula.
- Allow to marinate for 10-15 minutes, or until shrimp turns pink.
3- Prepare the Vegetables:
- Dice red onion, peel and dice cucumber, and dice tomatoes.
- Thinly slice serrano chilies and chop cilantro leaves.
- Dice the avocado.
4- Combine the Ceviche:
- Add onions, serrano chilies, chile piquín, cucumber, and tomatoes to the marinated shrimp. Mix well.
- Drizzle Maggi Jugo seasoning and add Clamato. Mix gently.
- Adjust seasoning with additional salt if needed.
- Add cilantro and lastly, gently fold in the avocado.
5- Serving Suggestions:
- Serve on tostadas with a layer of mayonnaise.
- Drizzle preferred hot sauce for an extra kick.
