Koufeto is a delightful Greek sweet preserve deeply rooted in tradition, especially popular on the island of Milos. Made with fragrant thyme honey and crunchy almonds, this dessert takes humble white pumpkin to new heights. Serve it as a unique treat to end a meal or gift a jar to friends and loved ones!
Ingredients
🎃 4 kg white pumpkin squash, peeled, deseeded, and cut into small cubes
🍚 2 kg sugar
🍯 2 kg thyme honey, preferably Milos Honey (Μήλο Μέλι)
🌰 1 kg peeled almonds
Instructions
1- Prepare the Pumpkin:
- Start by cutting the white pumpkin squash in half.
- Remove all seeds and fibrous material using a spoon.
2- Dice the Pumpkin:
- Slice the pumpkin halves into wedges.
- Peel off the skin and dice the flesh into small cubes, approximately 1-2 cm each.
3- Combine Ingredients:
- In a large metal pot, combine the pumpkin cubes with sugar, thyme honey, and peeled almonds.
4- Cook the Mixture:
- Place the pot over medium heat on a stove.
- Begin stirring with a wooden spoon to mix all ingredients thoroughly.
5- Simmer and Thicken:
- Continue to stir continuously while cooking for about 1 hour to 1 hour and 10 minutes.
- The mixture is ready when it thickens, the pumpkin is tender and translucent, and the syrup achieves a rich, amber color.
6- Cool and Serve:
- Once done, remove the pot from heat.
- Allow the mixture to cool and set before serving.
