Ingredients
🐟 1 whole whitefish Siika, approximately 800g
🧂 Generous amount of Meira Merisuola coarse and fine sea salt
📦 MUURIKKA Lepähaketta alder smoking chips
🌿 Small juniper branch, approximately 10-15 cm
🍬 3 pieces of granulated sugar
Instructions
1- Prepare the Fish:
- Rinse the whitefish thoroughly under running water, ensuring the cavity is clean.
- Pat dry with paper towels.
2- Salt the Fish:
- Generously cover the fish, inside and out, with Meira Merisuola coarse and fine sea salt.
3- Rest the Fish:
- Wrap the salted fish in parchment paper, then newspaper.
- Place it in the Whirlpool refrigerator for 2 hours.
4- Prepare the Smoker:
- Arrange the smoking box components.
- Set it on the outdoor brick structure.
5- Build the Fire:
- Place birch wood in the firebox.
- Light with SAMPO matches.
6- Add Flavoring Agents:
- Spread MUURIKKA Lepähaketta alder chips at the bottom of the smoking box.
- Add the juniper branch and sprinkle sugar for browning.
7- Assemble the Smoker:
- Replace the fat drip pan and grill rack.
8- Prepare Fish for Smoking:
- Unwrap the fish.
- Wipe off excess salt with paper towels.
9- Place Fish in Smoker:
- Lay the fish on the grill rack.
- Close the smoker's lid.
10- Smoke the Fish:
- Allow to smoke for 30-40 minutes.
- Check doneness by gently pulling a fin; it should come away easily.
