Ingredients
🦞 6 kg home-caught crayfish "egenfångade kräftor"
💧 6 liters water
🌿 1 large bunch fresh dill crowns
🍺 1 can 330-500ml Guinness or Porter dark beer
🍬 6 sugar cubes
🧂 225g coarse salt Kvarn or Grovsalt
Instructions
1- Prepare Crayfish:
- Thoroughly rinse and sort the 6 kg of live crayfish to ensure even cooking.
2- Prepare Brine Base:
- In a large stainless steel cooking pot, pour 6 liters of water and heat on a black ceramic induction hob.
3- Flavor the Brine:
- Using kitchen scissors, cut the fresh dill crowns and add them to the pot.
- Pour in one can of Guinness or Porter dark beer, followed by 6 sugar cubes.
- Add 225g of coarse salt to the pot.
4- Boil Brine:
- Bring the mixture to a vigorous boil and let it simmer for 5 minutes to extract and meld the flavors.
5- Cook Crayfish:
- Carefully add the sorted crayfish into the boiling brine using stainless steel cooking tongs.
- Cover the pot with a glass lid and wait for the liquid to return to a rolling boil.
- Once boiling, cook the crayfish for an additional 5 minutes.
6- Cool:
- Remove the pot from heat and allow the crayfish to cool completely in the brine. Let them rest in the pot or their cooking liquid overnight for maximum flavor infusion.
7- Pack:
- Once cooled, pack the crayfish into food storage containers, optionally adding more fresh dill crowns for added aroma.
