Instructions

1- Prepare the Calcium Hydroxide Solution (Optional):

  • In a large bowl, mix 2 liters of water with 1 teaspoon of calcium hydroxide. Stir until it is fully dissolved. This solution will help to firm up the sweet potatoes and maintain their shape during cooking.

2- Soak the Sweet Potatoes:

  • Peel and cut the sweet potatoes into thick slices or cubes. Place them in the calcium hydroxide solution, ensuring that they are fully submerged. Let them soak for 1-2 hours. This step is optional but recommended for better texture.

3- Rinse and Prepare Syrup:

  • After soaking, rinse the sweet potatoes thoroughly in cold water to remove any excess calcium.
  • In a large pot, combine 4 cups of sugar (or half sugar and half piloncillo) with 2 liters of fresh water. Add the cinnamon stick and star anise.

4- Cook the Sweet Potatoes:

  • Add the rinsed sweet potatoes to the pot with the sugar mixture. Stir to combine.
  • Bring the mixture to a gentle boil over medium heat, then reduce to low heat. Let it simmer uncovered for 2-3 hours, stirring occasionally. The goal is to allow the sweet potatoes to absorb the syrup as it reduces.

5- Thicken the Syrup:

  • Continue cooking until the syrup is thick and glossy, and the sweet potatoes are fully candied and translucent.

6- Cool and Serve:

  • Once cooked, remove from the heat and let the candied sweet potatoes cool. They are usually served at room temperature or slightly warm.
