- 2 sachets vanilla sugar

- 1 large onion
- 1 large carrot
- 1 egg
- 1 heaping tablespoon cornstarch
- Salt and pepper, to taste
- ½ teaspoon nutmeg
- Cooking oil, for frying

Homemade Applesauce:
1. In a small pot or saucepan, combine the prepared apples with the water, sugar, vanilla sugar, and lemon juice.
2. Stir the ingredients to mix them well.
3. Bring the apple mixture to a boil over low to medium heat.
4. Cover with a lid and let it cook for about 10 - 12 minutes, or until the apple pieces are softened, stirring occasionally.
5. Remove from heat once the apples are soft enough and use a blender to purée the mixture until it achieves a creamy applesauce consistency.
6. Set the applesauce aside to cool.
Potato Pancakes:
1. Begin by finely chopping the onion.
2. Peel the potatoes and carrot and coarsely grate them using a grater.
3. Wrap the grated potatoes and carrot in a clean kitchen towel and squeeze out as much liquid as possible over the sink.
4. Transfer the squeezed potato and carrot rasps to a mixing bowl.
5. Add the chopped onion, egg, cornstarch, salt, pepper, and nutmeg to the bowl.
6. Mix all ingredients until well combined.
7. Heat a large pan and add enough oil to cover the bottom completely.
8. Once the oil is hot, spoon the potato mixture into the pan and gently flatten to form pancakes.
9. Fry each potato pancake for about 2 – 3 minutes on each side until golden brown, carefully flipping once to cook evenly.
10. When browned and cooked through, remove the pancakes from the pan and let them drain on a kitchen towel.
11. Serve the warm potato pancakes with the cooled homemade applesauce.
