Ingredients

🍚 500g Wet rice flour
🍶 1 1/4 tsp Instant Yeast
🍬 1 tsp Sugar
🧂 1 tsp Salt
🥥 3 1/2 to 4 cups Thick Coconut Milk
🍈 Sesame oil, a small quantity for greasing the pan


Instructions

1- Prepare the Batter:

  • Place the wet rice flour in a large mixing bowl.
  • Sift the coconut milk into the rice flour.
  • Thoroughly mix the flour and coconut milk by hand until the mixture is smooth and lump-free.
  • Add instant yeast and sugar to the batter and mix well.
  • Cover the bowl with cling wrap and leave it to ferment in a warm place until it has risen and is bubbly, approximately 35 minutes.
  • After fermentation, add salt to the batter and stir for about a minute until dissolved.
  • Add the remaining coconut milk to the batter and mix until smooth and thinner in consistency.
  • Allow the batter to rest for an additional 5 minutes.

2- Cook the Hoppers:

  • Heat an appa pan over medium-high heat.
  • Lightly grease the hot pan with sesame oil using a paper towel.
  • Pour one ladleful of the batter into the center of the hot pan.
  • Swirl the pan immediately to spread the batter, forming a thin layer with a thicker center.
  • Cover the pan with its lid and increase the heat to high.
  • Cook for about 2 minutes, until the edges of the hopper become crispy and golden.
  • Remove the lid, gently loosen the hopper edges using a spatula or knife.
  • Reduce the heat to low, remove the hopper, and place it on a cooling rack.
  • Clean the pan with a lightly oiled paper towel before cooking the next hopper.

Cook Time: Approx. 2 minutes per hopper
Total Time: 1.5 to 2 hours
Servings: Approximately 10 hoppers
