Instructions
1- Prepare Plantains:
- Heat vegetable oil in the wok over medium-high heat.
- Peel the plantains and slice them into round or oblong pieces.
- Fry the plantain slices in batches, avoiding overcrowding. Cook until golden brown (about 7 minutes per batch).
- Use a slotted spoon to remove plantains and drain on paper towels.
2- Prepare Egg Mixture Base:
- Dice onion, tomatoes, and red bell pepper.
- In a frying pan, heat 1 tablespoon of olive oil over medium heat.
- Sauté onions with a pinch of salt until translucent. Add tomatoes and bell peppers, sauté for another 2 minutes.
- Transfer sautéed vegetables to a mixing bowl.
3- Prepare Egg Mixture:
- Crack eggs into the bowl with vegetables.
- Add curry powder, thyme, white pepper, crumbled bouillon cube, and a pinch of salt.
- Whisk until everything is thoroughly combined.
4- Cook the Omelet:
- Clean the frying pan if necessary and add 2 tablespoons of olive oil. Heat over low to medium heat.
- Pour the egg mixture into the pan, spreading it evenly.
- Push the setting edges towards the center with a spatula to allow uncooked eggs to flow underneath.
- After 5 minutes, sprinkle parsley over the omelet.
- Flip the omelet onto a plate, then slide back into the pan to cook the other side (3-4 minutes until set).
