Ingredients:
- 1 3/4 cups ground almonds
- 1 cup sugar
- 1/4 cup honey
- 2 tablespoons water
- Almond extract (optional, up to 1 teaspoon)
- Icing sugar, for rolling out marzipan
- 1 1/2 cups chocolate chips (milk or dark chocolate)
Instructions:
1. In a medium bowl, pour in the ground almonds.
2. In a saucepan, combine sugar and honey. Stir in 2 tablespoons of water to help liquefy the sugar.
3. Cook the sugar mixture over high heat, stirring as it comes to a full boil. Ensure that the sugar is fully dissolved.
4. With the food processor running, slowly add the hot sugar syrup to the ground almonds, which helps to grind it into a smooth paste.
5. Add the almond extract to the mixture, depending on taste preference.
6. Prepare a piece of plastic wrap and transfer the thick marzipan onto it. Wrap the marzipan tightly and allow it to cool. It will be shelf-stable and can be kept in the pantry for up to a month.
7. Once cooled, cut the marzipan in half. Dust your work surface with icing sugar.
8. Gently warm the marzipan with your hands before rolling it out to about a quarter-inch thick.
9. Use cookie cutters to cut the marzipan into your desired shape.
10. Melt 1 1/2 cups of chocolate chips using a double boiler method or by melting in a bowl set over a pot with an inch of simmering water.
11. Once chocolate is melted and smooth, dip the marzipan bites halfway into the chocolate and shake off the excess before placing them on a tray.
12. Let the chocolate set by chilling the tray in the refrigerator for 10 minutes.
13. The chocolate-dipped marzipan bites are now ready to be enjoyed.
