Ingredients:
- 1 cup (237 ml) of Milk
- 3/4 cup (177 ml) White Granulated Sugar
- 2 Egg Yolks
- 1/2 cup (118 ml) White Wine Vinegar
- 1 tbsp (10 g) Flour
- 1 tbsp (7 g) Mustard Powder
- 1/2 tbsp (2 g) Fresh Tarragon, finely chopped
- A pinch of salt

- Mixing bowl
- Whisk
- Measuring spoons and cups
- Knife and cutting board for chopping tarragon

Cook Time: 10-15 minutes
Total Time: 20-25 minutes
Servings: Makes approximately 1.5 cups of sauce
Instructions:
1. Begin by prepping your fresh tarragon. Remove the leaves from the stems and chop them finely. Set aside.
2. In a mixing bowl, combine the flour, granulated sugar, and mustard powder. Whisk them together thoroughly to ensure they're well mixed.
3. In a saucepan, combine the milk and egg yolks. Whisk these ingredients together until they're well combined.
4. Place the saucepan over medium heat and while continuously whisking, gradually incorporate the sugar, flour, and mustard powder mixture until smooth and well blended.
5. Slowly add the white wine vinegar to the mixture. Continue to whisk as you pour to maintain a smooth consistency.
6. Increase the heat to medium-high and continue to stir the mixture. Keep an eye on it as you allow it to reduce, it should start to thicken and appear glossy.
7. Once the thickness is to your liking, season the sauce with a pinch of salt for taste.
8. Stir in the freshly chopped tarragon and let the sauce continue to reduce until you achieve your desired consistency. Ideally, it should be thick enough to stick to chicken wings and not drip off sandwiches.
9. Your Sweet Mustard Sauce is now ready! Let it cool slightly before serving, or store it in an airtight container in the refrigerator for later use.
Cooking Tips:
- For a smoother sauce, strain it through a fine mesh sieve to remove any lumps.
- Adjust the thickness by cooking it longer for a thicker sauce, or adding a bit more milk for a thinner sauce.
