1. Begin by preheating your oven to 400 degrees Fahrenheit to ensure a nice, hot environment for baking your apple strudel.
2. Peel your apples and dice them into small cubes, removing the flesh away from the core.
3. In a large bowl, combine your diced apples, 1/4 cup of golden raisins, and 1 tablespoon of lemon juice. Add 1 teaspoon of ground cinnamon and toss everything together until it's evenly mixed.
4. Prepare your work surface by laying out a clean, lightly floured tea towel. This will prevent your puff pastry from sticking and ease the rolling process.
5. Unfold your thawed puff pastry onto the tea towel and roll it out into a 15 by 12-inch rectangle.
6. Spread 3 tablespoons of panko breadcrumbs in a 4-inch wide strip, keeping a 2-inch border on three sides of the pastry.
7. Distribute half of the apple mixture over the breadcrumbs and drizzle with 2 tablespoons of melted butter.
8. To assemble the strudel, start rolling it tightly from the filled long edge, using the tea towel to aid you. Once rolled, tuck in the ends and transfer it seam-side down to a baking sheet lined with parchment paper.
9. Bake in the preheated oven for about 20-25 minutes, or until the pastry is golden and puffed.
