1. In a large pot of boiling salted water, cook the cleaned potatoes until they are fork-tender, about 15-20 minutes depending on their size.
2. While the potatoes are cooking, prepare your field salad by washing it and draining it properly. Set aside.
3. Once the potatoes are cooked, remove from water and press them through a potato ricer or mash them gently to maintain a bit of texture.
4. In a mixing bowl, create your dressing by whisking together the minced garlic, white wine vinegar, olive oil, salt, pepper, and nutmeg. If you prefer a little tang in your dressing, you may add a teaspoon of mustard.
5. Combine the warm, pressed potatoes with the dressing gently until they are well coated. Adjust the seasoning as necessary.
6. Arrange the fresh field salad on serving plates and spoon the warm, dressed potatoes over the top.
