Instructions

1- Prepare the Octopus:

  • If using frozen octopus, thaw it completely by placing it in the refrigerator overnight. Once thawed, rinse it under cold water and pat dry with a paper towel.

2- Tenderize the Octopus (if necessary):

  • Some octopuses may need tenderizing. Consider gently simmering the octopus in a pot of boiling water with a lemon half for about 45–60 minutes until tender. This step might vary depending on the octopus's origin and type.

3- Cook the Dish:

  • In a large skillet or sautΓ© pan, heat the olive oil over medium heat using a Lodge Cast Iron Skillet, if available.
  • Add the chopped onion and minced garlic to the pan, sautΓ©ing until they become translucent, around 5 minutes.
  • Stir in the halved cherry tomatoes and cook until they begin to soften.
  • Add the octopus to the pan and cook for about 5 minutes, allowing it to absorb the flavors.
  • Stir in the olives and season with oregano and salt. If desired, add a pinch of red pepper flakes for a bit of heat.
  • Remove from heat and add lemon juice. Sprinkle with fresh parsley before serving.
