Ingredients
π 2 whole fish

600 g dry onions, thinly sliced

400 g tomato pulp
π§ 6 cloves garlic, minced
π 2 bay leaves
πΏ A little olive oil
πΆ 1 tablespoon vinegar
πΏ 2 tablespoons parsley, chopped
Instructions
1- Marinate the Fish:
- Clean the fish thoroughly and pat dry.
- Season them with salt, black pepper, and lemon juice. Set aside to marinate.
2- Prepare the Onion and Tomato Sauce:
- In a pan, heat some olive oil over medium heat.
- Add the sliced onions and sautΓ© them, occasionally covering the pan, until the onions soften and reduce in volume.
- Stir in the tomato pulp, garlic, bay leaves, salt, and black pepper. Allow the mixture to cook together for 5-7 minutes until the flavors blend well.
3- Cook the Fish:
- In another pan, heat a little olive oil.
- Lightly dust the marinated fish with flour.
- Fry the fish lightly on both sides until they begin to turn golden.
- Deglaze the pan with white wine, ensuring all the flavorful bits are lifted.
4- Assemble and Bake:
- Preheat your oven to 200Β°C (392Β°F).
- In a baking dish, spread the fried onions and tomatoes as a base.
- Adjust the seasoning by mixing in 1 tablespoon of vinegar and black pepper.
- Place the sautΓ©ed fish on top, and drizzle with a bit more wine, olive oil, and lemon juice for flavor enhancement.
- Bake in the preheated oven for 20-25 minutes.
5- Finishing Touch:
- Once done, remove the dish from the oven and sprinkle fresh parsley on top before serving.
