Ingredients

🐟 2 whole fish
πŸ§‚ Salt
🌢️ Black pepper
πŸ‹ Lemon juice
🌾 A little flour for dusting the fish
🍷 1/2 cup white wine
πŸ§… 600 g dry onions, thinly sliced
πŸ… 400 g tomato pulp
πŸ§„ 6 cloves garlic, minced
πŸƒ 2 bay leaves
🌿 A little olive oil
🍢 1 tablespoon vinegar
🌿 2 tablespoons parsley, chopped

Instructions

1- Marinate the Fish:

  • Clean the fish thoroughly and pat dry.
  • Season them with salt, black pepper, and lemon juice. Set aside to marinate.

2- Prepare the Onion and Tomato Sauce:

  • In a pan, heat some olive oil over medium heat.
  • Add the sliced onions and sautΓ© them, occasionally covering the pan, until the onions soften and reduce in volume.
  • Stir in the tomato pulp, garlic, bay leaves, salt, and black pepper. Allow the mixture to cook together for 5-7 minutes until the flavors blend well.

3- Cook the Fish:

  • In another pan, heat a little olive oil.
  • Lightly dust the marinated fish with flour.
  • Fry the fish lightly on both sides until they begin to turn golden.
  • Deglaze the pan with white wine, ensuring all the flavorful bits are lifted.

4- Assemble and Bake:

  • Preheat your oven to 200Β°C (392Β°F).
  • In a baking dish, spread the fried onions and tomatoes as a base.
  • Adjust the seasoning by mixing in 1 tablespoon of vinegar and black pepper.
  • Place the sautΓ©ed fish on top, and drizzle with a bit more wine, olive oil, and lemon juice for flavor enhancement.
  • Bake in the preheated oven for 20-25 minutes.

5- Finishing Touch:

  • Once done, remove the dish from the oven and sprinkle fresh parsley on top before serving.
