Instructions

1- Prepare the Yuca:

2- Boil the Yuca:

  • Bring the water to a rolling boil on a Teka gas stove.
  • Cook until the yuca becomes soft, which should take about 20-25 minutes.

3- Mash the Yuca:

  • Drain the water and transfer the yuca to a clear glass bowl.
  • Use a metal fork to thoroughly mash the yuca until it's smooth and free of lumps.

4- Prepare the Cheese:

  • Grate 300 g of fresh cheese until it is in fine, shredded strands.

5- Combine Ingredients:

  • Add the grated cheese to the bowl of mashed yuca.
  • Using your hands or a fork, mix them together until the ingredients are fully combined and form a pale, cohesive dough.

6- Shape the Sonsos:
