Instructions

1- Marinate the Meat:

2- Prepare the Sauce:

  • In a pot, rehydrate the dried chilies in beer by simmering on low heat until soft.
  • On a baking sheet, char both types of tomatoes using a kitchen torch.
  • Transfer the charred tomatoes, garlic cloves, and rehydrated chilies with liquid into a blender.
  • Blend until smooth. Set aside in a container.

3- Cook the Meat and Vegetables:

  • Remove the meat from the marinade and grill on high heat until charred and cooked through to your preference. Allow the meat to rest and then dice it.
