Discover the delightful taste of Belize with this classic breakfast favorite, Fry Jacks. Perfectly fluffy and golden, these Belizean delights are easy to make and bring a touch of Caribbean cuisine to your breakfast table. Chef Sean Kuylen guides you through this simple yet authentic recipe that captures the essence of Belizean culinary tradition.

Ingredients

🍞 3 cups all-purpose flour Bob's Red Mill
πŸ§‚ 1 teaspoon salt Morton’s Kosher Salt
🌾 1 tablespoon baking powder Clabber Girl
🍯 1 tablespoon sugar Domino
πŸ₯› 3/4 cup warm water
πŸ›’ 3 tablespoons vegetable oil Wesson
🧈 Additional vegetable oil for frying approximately 1 cup Wesson

Instructions

1- Mix Dry Ingredients:

  • In a large bowl, combine the flour, salt, baking powder, and sugar.
  • Mix well to ensure even distribution of the dry components.

2- Add Liquid Ingredients:

  • Gradually add the warm water and 3 tablespoons of vegetable oil to the dry mixture.
  • Stir until the mixture begins to form a dough.

3- Knead the Dough:

  • Transfer the mixture onto a floured surface and knead the dough for about 5 minutes until it becomes smooth and elastic.
  • If the dough is too sticky, add a little more flour.

4- Rest the Dough:

  • Cover the dough with a kitchen towel and let it rest for about 15 minutes.
  • This helps the dough relax and makes it easier to roll out.

5- Roll and Shape:

  • Divide the dough into 12 equal parts.
  • Roll each portion into a ball and then flatten with a rolling pin into a circle about 1/4-inch thick.

6- Prepare for Frying:

  • Heat the vegetable oil in a deep frying pan over medium heat.
  • To test if the oil is ready, drop a small piece of dough into the oil; it should float and start to brown.

7- Fry the Jacks:

  • Carefully place a few pieces of dough in the hot oil, allowing enough space for them to puff up.
  • Fry each side for about 1-2 minutes or until golden brown.

8- Drain the Fry Jacks:

  • Remove the Fry Jacks from the oil using a slotted spoon and rest them on a paper towel-lined plate to drain excess oil.

9- Serve Warm:

  • Serve the Fry Jacks warm, accompanied by your favorite toppings, such as refried beans, cheese, or scrambled eggs.
